A little of this and that

I stumbled upon this smoothie recipe the other day (on my daily Pinterest peruse) and yesterday morning, I made it. If you know anything about me, I love bananas and oatmeal and I hate mornings. So anything that combines food I love and gives me an energy boost to start my day is a winner in my life. 
{chiquita} I followed the recipe other than the ice. I threw in a small handful, but I used frozen bananas, so the consistency was delivered through that. And I went a little light on the almonds simply because I used my remaining stash and didn't quite have enough. It was delicious!

As for the protein-energy-inducing part, I don't know for sure. I still felt a little laggy, but since I woke up this morning with a pretty wicked head cold, it's possible the low-energy was a result of the impending ick. I do know that it was filling. I did not need any additional food until lunch and was satisfied with the substantial-ness of the smoothie.

Once we hit Sam's Club this weekend and pick up more almonds and bananas, I will be making this again. Perhaps on mornings where I have a workout planned and need an easy but delicious energy-infused breakfast. I'll report back if I start to see more results in that area.


In other news, I am completely bored by this season of Army Wives. I intended on recapping episodes 3 and 4 and I could not come up with enough stuff I remembered or cared about to make a worthwhile post. I can't stand Ashanti's "acting" and most of the story line feels contrived. It remains that my favorite moments involve the original characters and I am not forging the same bond with the new ones.

I will still see it through at least a few more episodes to see if it gets better. And now that Walking Dead is over until the fall, I have a little more TV time on my Sunday nights. We'll see if my feelings change going forward. 

Finally, Kramer is settling in to our family just fine. We have finally gotten past many of our original hang-ups developed a bit of a routine. He's now bell and leash-trained as well as many other commands. He now handles bedtime with ease and can play by himself if necessary. Now that he has the basics down we need to move on to the more complicated issues - like his random fears and his stranger anxiety. We need to socialize him with people and dogs more and we need to get him more comfortable in the car. 

We are making progress and know that he has come so far in such a short time, but it is still frustrating to have him backtrack or demonstrate a whole new fear. But, really, can you stay mad at this face?

Recipe: Portabello Pasta in Red Wine Sauce

This recipe is so quick and simple (we adapted it from a recipe on the stewed tomatoes can!) and yet one of the more delicious meals we've had in a long time. Even Al was gushing about it and it contains no formal protein (a big deal for him.) 

Ingredients:
           1 box Penne Pasta          2 Cans Stewed Tomatoes           
1 1/2 Cups Portabello Mushrooms, chopped
        1 Can Tomato Sauce   1 White Onion, chopped    1 tsp. garlic powder           
1/3 cup red wine     1/4 cup oil (canola or vegetable)
     1 pinch (each) italian seasoning, fennel, & pepper
Process:
o Boil water in medium saucepan and cook pasta per instructions.
o Meanwhile, in a large skillet, put onion, mushrooms and garlic in oil and brown
o Add remaining ingredients and bring to boil.
o Simmer on low heat for 10 minutes
o Add almost-cooked pasta and cook for another 5 minutes (until pasta is fully tender and has soaked in the tomato and wine flavors)
o Sprinkle parmesan cheese on top and serve!
Voila! A delicious Italian meal full of flavor and relatively healthy. If you have a heavy red wine that you would prefer not to drink, this is the perfect way to use it up! If you did want to add a protein, we actually thought clams would be amazing. It would keep the Italian flavoring and add a great texture. If shell-fish are not your thing, a few slices of pepperoni would also be delicious!

**Note: I used a burgundy wine for the sauce and it was perfect. Any red cooking wine (not a sweeter red for drinking, would work well) but test a small amount before adding to the recipe. The pasta will soak up the flavor and if you pick the wrong wine, you will not be able to salvage the rest of the dish!

Sunday Treats

I have been very busy this weekend, planning for our trip home, baking cookies, a few house projects, and keeping up with my normal work tasks. I have enjoyed some great Christmas tunes (and a smattering of football) for background noise and the weather has been sunny and crisp. All in all, a perfect start to December.
Since I am in such a good mood, I wanted to drop in to share a few goodies with you.

Just made these. Amazing. I made no alterations to any of the recipes and I found them to all be delightful!

This week, I have four days of gift lists. They are all things I want, but serve as a great guide for the women in your life.
Soon, I will also share my recent DIY: chalkboard file cabinet. It is currently sitting empty in  my office, but once I get a few hours, I will start filling it up with colorful labels, folders, and all the boring (and not-so-boring) documents that keep our house together.

Finally, I will recap the month of November and the progress on my 12 in 2012 list.

Pumpkin Chocolate Chip Bars

On this lovely Halloween, I wanted to share a great pumpkin recipe with y'all.

I know I've shared this before - but it's too much fun not to share again!

You will need: 
2 cups flour
1 tbsp pumpkin pie spice
1 tsp baking soda
3/4 tsp salt
1 cup unsalted butter
1 1/4 cups sugar
1 egg
2 tsp vanilla extract
1 cup pumpkin puree (not the pie filling) 
1 pkg semisweet chocolate chips



Directions: 
1. Preheat oven to 350. Grease 9x13 or 8x8 pan.
2. In medium bowl, whisk flour, pie spice, baking soda, and salt. Set aside. 
3. Cream butter and sugar in another bowl until smooth. Beat in egg and vanilla until thoroughly combined. Add pumpkin puree and mix well. 
4. Slowly mix in dry ingredients until combined. Fold in chocolate chips. 
5. Spread evenly in pan. Bake for 35-40 minutes. You will see the edges pull away and a toothpick will come out clean when the bars are fully cooked.

I found that it had the consistency of a spice bread more so than a bar and I also felt as though the chocolate overwhelmed the pumpkin. If I make these again, I would cut the chips down by a third and add a little more pie spice. They tasted great and actually fed us dessert for over two weeks! Serve warm with ice cream or chilled - both are yummy!

Mel's Favorite Gadgets, Books, & Eats


Today, I started easy and put together a round-up of my favorite things (of the season). I hope you enjoy!

My favorite gadgets

BBW Candles, especially Autumn and Fresh Balsam (as winter rolls around.)
Or, as an alternative, flameless candles which are perfect for lanterns and hard-to-reach places. No need to worry if you forget to put them out when  you got to bed or leave the house! 
These acrylic trays and drawers for stacking, from the Container Store. I can't wait to reorganize my makeup and bathroom supplies in a pretty way using these trays.
The Ninja Master kitchen blender set. We picked ours up at Sam's Club for about $50 (big steal!) and we've used for everything from smoothies to chopping veggies and baking ingredients. We were able to get rid of our chopper and our older-model blender and replace it with the 5-piece set. Best money I've spent in a very long time!

This dress from Spiegel - perfect for a night out, but still elegant enough for a work event or dinner party with a client.

12 in 2012: Month in Review

Another month has come and gone and it is time to check in on my 12 in 2012 goals.

1. Speak up.
I am doing fine on this. I am sticking to the commitments I've made without over-extending myself. I am making sure to take time for myself, Al and my friends and still focus on school and work.

2. Spend less.
Check out my fashion blog for the specifics of this goal and my fashion budget tracker.

3. Spread the Love.
I did not get to focus on this as much as I wanted to during February, but I have a couple ideas up my sleeve for March. 

4. Snap it.
I have kept up on my daily photo album on Facebook. I also took some pics of my trip to Colorado this month, which I hope to post soon!

5. Spice it Up.
I made crab-stuffed mushrooms, zucchini feta bites and raspberry white chocolate whoopie pies for a party this month. All of them were seriously delicious!!

6. Sweat.
Yeah...about that...

7. Stamp It.
On hold until graduation

8. See the Sights.
I am planning a trip to the Judy Garland museum in March and want to get over to the Minnesota Zoo once the weather warms up a bit!


In Colorado this month, we walked downtown, drove through the Colorado College campus and visited the Pioneers Museum (although, to be honest it was closed...) We also drove up through the mountain to explore some of the smaller towns like Green Mountain Falls. 

9. Style it.
Check out my fashion blog to see how I've been doing on this one.

10. Save space.
Of course, we moved into our new place in Colorado, and I did a LOT of organization there. I haven't done much in Minnesota this month, but I have a few ideas...

11. Slow down. 12. Sleep more.
After coming off Spring Break, I am feeling relaxed and refreshed...just in time for school to really ramp up!

Stuffed Croissants

I had some girlfriends over on Friday night and made these.


The original recipe is here, but I made a few modifications.
For one, I only made the broccoli and cheese version because some of my guests were vegetarians and those seemed quicker than the black bean version.
Second, I made two options: 1) broccoli, mushroom and pepper jack cheese and 2) broccoli and mozzerella cheese. They were both delicious.
I used a steam-bag for the broccoli and cooked them part-way before cutting them up and putting them into the croissants.
Finally, I found it difficult to wrap the dough as you would a normal croissant - at least without skimping on the stuffing contents. So, instead, I just wrapped them like croissants and folded up the edges a bit so I could put more yumminess inside them!
Bake them per the instructions on the Pillsbury can and you're good to go!

Andes Mint Cookies

After Jaci posted about some cookie options she was thinking of baking for their cookie exchange (of which I am unable to attend - sad face) I mentioned my favorite Andes Mint cookies that I've made in past years.

I had an event at school this weekend, which provided the perfect opportunity to make them and thought I would share with all of you. I used this recipe, although it is not the exact recipe I typically use. That one is in a book. With my husband. In Texas. The good news: I've had both versions and while I notice a slight difference in the two, they are both delicious! Instead of walking you through the steps I took, I'll let you read the recipe for yourself and simply look at my drool-worthy photos to inspire you to rush out and try them yourself.
